Traditional Greek bean soup “fasolada”

Beans are one of the most popular legumes around the world and are cooked in many ways. “Fasolada” is the Greek version for bean soup and is very popular during the cold winter days. Both healthy and delicious is ideal for vegans and vegetarians.

 Ingredients:

  • 500 gr white beans
  • 3 chopped carrots
  • 2 onions finely chopped
  • 80 gr cellery finely chopped
  • 1 spoon tomato paste
  • ½ cup extra virgin olive oil
  • salt and pepper to taste

Directions:

  1. Place the beans in a bowl covered with water and leave overnight. This will help boil easier and in much less time
  2. Drain the beans and put them in a skillet covered with water and bring to boil in medium heat. Add onions, carrots, cellery and tomato paste and let boil. If needed add some more water.
  3. After 45 minutes add salt and pepper to taste and the olive oil. Let boil for about 30 more minutes or until the beans are ready and tender. This may vary depending on the type of beans you use. 
  4. Serve hot together with some feta cheese and olives

Tips: You can add some chilli pepper flakes if you like spicy food, or slices of red bell peppers
