Giouvetsi or Youvetsi

Traditional Greek dish of baked meat with pasta. Usualy made with veal but can also be made with chicken or lamb. The pasta used is “kritharaki” orzo or “hilopites” a traditional Greek square pasta with eggs. 

 Giouvetsi is an easy to make recipe with very good taste but takes a lot of time to prepare it. It is ideal for a Sunday meal with the family or when you want to prepare something delicious in large quantities for many people.


  • 1 kg veal cut in portions
  • 2 onions chopped
  • 2 garlic cloves chopped
  • 500 ml concentrated tomato juice
  • 1 tablespoon sugar
  • 1 glass red wine
  • 450 gr thick orzo or Greek square noodles
  • salt and pepper to taste
  • ½ cup of extra virgin olive oil


  • bay leaves
  • cinnamon
  • clove
  • Grated cheese for serving


  1. Saute the meat, onions and garlic in a sauce pan with the olive oil. Add red wine. 
  2. When alcohol evaporates add tomato juice, salt, pepper and sugar. 
  3. After cooking for 5 minutes place the ingredients in a roasting pan or a  roaster and continue cooking in the oven in medium heat until meat gets tender (1-2 hours). Add water when needed so that meat doesn't get dried. 
  4. 15 minutes before the food is ready add the orzo or square noodles and also add some more water. Continue cooking and don't forget to stir occasionally. 
  5. Serve with grated cheese.


You can add bay leaves or cinnamon and clove for extra flavor when adding tomato juice.

If you don't want to spend a lot of time cooking you can either use chicken instead of veal which is cooked much faster or use a pressure cooker. If you use a pressure cooker, cook the meat in the pressure cooker instead of the oven and place the ingredients in a roasting pan only for cooking the pasta.
